Delight your palate with Citrusy Pane Cunzato, a vibrant and refreshing take on the classic Sicilian pane cunzato. This dish elevates the humble loaf into a culinary masterpiece, infusing traditional flavors with a zesty citrus twist. The foundation of the dish is a crusty, artisanal bread, preferably a Sicilian-style loaf, which is toasted to a golden brown perfection, offering a satisfying crunch with each bite.

Ingredients

½ of a loaf of a rustic batard Drizzle: Approximately 5 anchovies Approximately 10 black olives 3 cloves of garlic ¾ lb of a hard mild sheep’s cheese A few handfuls of a green salad mix Herbs: leaves of fresh oregano, thyme, dill fronds 1 orange, zested and peeled/ sliced horizontally
Belva Fredo olive oil  
Active Time: 40 minutes

Steps

Prepare the Bread:
Cut the rustic batard in half. If the bread is very thick, slice it horizontally to create a flatter base for the toppings.
Garlic Infusion:
Peel and finely mince the garlic cloves. Set aside.
Cheese Preparation:
Slice or crumble the sheep’s cheese into bite-sized pieces or thin slices.
Prepare the Orange:
Zest the orange, avoiding the white pith. Set the zest aside.
Peel and slice the orange horizontally into thin rounds.
Assembling the Toppings:
Arrange the cheese slices or crumbles on the bread.
Add the anchovies and distribute the black olives.
Sprinkle the minced garlic over the top.
Adding Fresh Herbs:
Tear or chop the herbs (oregano, thyme, dill) and sprinkle them over the toppings.
Drizzling Olive Oil:
Lightly drizzle extra virgin olive oil over the toppings. This adds richness and helps to meld the flavors together.
Final Touches:
Place the orange slices on top.
Sprinkle the orange zest over the dish for added citrus flavor.
